Yummy Yummy But Super Easy Banana Cake

Can't express how easy and quick this cake is.  If you're a fan of banana cake you must make this cake.  If you're like me and have 2 or 3 brown bananas at any given time getting browner and browner on your counter, you must make this cake.  Really.

Ingredients:
Cake:
  • 2/3 cup sugar
  • 1/2 cup sour cream (but I've used yogurt as well)
  • 1 egg
  • 2 T unsalted butter, soft
  • 2-3 super ripe bananas
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda 
Preheat your oven to 350F.  Grease your 8x8 inch Pyrex pan.  Set aside.
Cream sugar, sour cream, egg and butter with handheld mixer.  Add bananas and vanilla.  Mix it up nicely.  Add dry ingredients to creamed mixture.  Mix well (but really just get it mixed in).  Pour into greased pan.  Bake for 20-25 minutes or until a toothpick inserted into the center comes our dry.  Really.  This step is important.  The yummy cake will sink in the middle if you take it out too early.  Check it with a toothpick.  It may have crumbs but it shouldn't come out wet.  Cool completely before putting on frosting or it'll melt.

Frosting:
  • 2 T unsalted butter, soft
  • 1 1/4 cup confectioner's sugar
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla bean paste or vanilla (I love the flecks the paste gives but really either work)
Cream butter and confectioner's sugar together until smooth.  Slowly add heavy cream and vanilla paste.  Mix until smooth.  Spread over cooled cake.  We like to make it first thing in the morning and after frosting the cake we set it in the refrigerator to firm up the frosting.
